1 zucchini, sliced in half and chopped into 1/4" pieces
2 carrots, sliced
1/2 onion, diced
1/2 red pepper, diced
1/2 yellow pepper, diced
1 can no salt added chickpeas, drained
1 small can V8 juice
Cooked all together in a skillet and served over brown rice.
